OK, long story short, I am going on an impromptu trip to Hong Kong and will have some free time there.
Putting it out to the brains trust for recommendations on cool things to see and do...

Wear Winnie... Winnie the Pooh, that is. A nice Winnie t-shirt or nice Winnie suit will be perfect... take a day trip to China in said gear

On a more serious note, it may help to know what you want to do and where you are staying

Nightlife - Wan Chai

Bus or train to the Peak.

Shopping @ Stanley Markets.

Etc.

near the airport is a train station called Tung Chung, catch the train there, then walk about 250 metres to the big budda cablecar
for a spectacular ride up to the big budda for lunch/dinner its very scenic and reaches up the side of the tallest mountain in HK.
Also the peak cable car on HK island is worth a ride. the double decker bus ride from central to Stanley market is also a must see.

No, they didn't touch my phone.
Immigration check was straight forward, just filled out a form and passport check.
