G'day MiniDorries
Get on eBay you maybe able to find the Garmin 920 for under $300 or I know you'll get the Garmin 310XT for $100 thats the one I use the 310XT is the best one I recon.
Or just wait a few months so you can by-pass the Garmin 920 as there is a new Garmin coming out totally devoted to Stand Up Training
Good Luck Happy Training.
Go the Garmin 910XT I have just upgraded to the 920 and the 910 will keep almost everyone happy for a good couple of years.

I wish I was your mum.
$250-$300 for a Xmas present, holy crap. That's big.

Vivoactive....
she can wear it all day, nice and thin, great battery life and she'll love the white one!
Get your old man to help out and get the Garmin 920 Mini Dorries. I just purchased the 910XT but the 920 has just a few more features like being able to download onto an iPhone. Doesnt sound like a big feature but if you travel and race like all of you guys do it is a handy feature. I started with the 310 and if you just want to track speed, where you have paddled etc and not load intervals onto it, you'll find the 310 very good value.
Also have a look at the Forerunner 220. waterproof, and also connected to the Garmin Connect world which means it is easy to make your own training program.
It's very light and battery lasts a 2 weeks with use, or 4 weeks if not using the GPS.
I have had one for over a year and use it only for standup training and downwinding and is very useful on all fronts.
There's only one correct answer; Vivoactive. Super light, thin, long battery life and waterproof. Configurable data fields, widgets, apps and watch faces available from the Garmin Connect Store and almost all are free. The other watches mentioned are big and clunky men sized watches or just outdated (sorry 220, I know, I had two). I use the Run app to track my paddling, the number of data fields will make your head spin and the cadence field does a pretty good job of tracking paddling strokes. Upload your data to your PC to get detailed info (again, head spinning). Also does other cool stuff like step counts and sleep tracking.
I almost forgot to mention that the Vivoactive is a better Smart Watch then the Apple Watch. Did I say super light, thin, long battery life, waterproof and built in GPS? Sorry Apple watch, maybe next time. You can read your emails, messages, Facebook, What's App, etc.; plus answer or reject phone calls (phone must be used as there is no built in mic or speaker). There's a whole lot more stuff, check dcrainmaker.com for a full on review.
p.s. It's $250 US, but can be found on sale for $230. Guaranteed to be worth the extra!
