If I was planning on moving to the NSW coast, which locations would give me the most use of Slalom & Wave gear??

You're asking about wind rather than locations, so I'll say Hunter Valley.
Despite being so far north it gets westerlies well because of the Valley, and has Birubi as the best spot for westerly wavesailing in all of NSW (though best is relative - there aren't many other decent options. It's often too windy).
Gets southerlies well, I think they drop off more to the north than they blow better to the south.
NEs are perhaps? not quite as good as the rest of the coast, but it gets at least 6 months of decent NEs.
