What's the best mount setting to use the footstraps? I fear I will injure my knee if one foot gets stuck to the board while the other foot is not attched to the board
I think it's more to do with board width than really what the straps are like. For me, when I go down ejecting from the straps is more about not flipping the foil onto me/the wing than about breaking an ankle, the boards not really wide enough to have enough form stability to hurt me. I'm on a 24" wide 75L fanatic but I think form stability is roughly Width squared x length so even something slightly bigger could be dramatically more "stable" and hence more dangerous for your joints.
Also, I would say that anything bigger I don't really need to be riding strapped - cause I'm I'm not jumping anything that big and it's too heavy to muscle around like I do with straps
I currently have three broken bones in my foot from a crash. It was a weird skatey crash where the board rotated around my front foot, and couldn't get out in time. I've never felt any strain in my knee and my feet usually come out easily. My back strap is fairly wide to allow for different placement, but tight at the top. Front strap is the opposite, a bit taller but narrow so tight on the sides.
I personally wouldn't use footstraps if I wasn't jumping (I actually don't when purely wave riding or downwinding). There's really no need to, I much prefer having an offset stance anyway.
Another option if you are worried is using Armstrong straps. They are such **** quality that they will just tear if under too much strain, so probably quite safe in a bad crash. I got sick of replacing them so switched to windsurf style straps, but when I go back to straps ill probably use those instead.
Bigger/looser the better for straps, if you can't rotate your foot fully in your straps then you're risking breaking bones or worse.
Kai Lenny on a Lenny Bros podcast (one of the early ones) says you should set your footstraps up, narrow side to side and higher top to bottom. You want the sides of the straps very close to the sides of your feet. Then you can twist your foot while in the strap to keep your feet in tight. In a crash your foot can slide right out since the strap is not tight on the top of your foot.

I use Starboard/Drake ultra light windsurf straps. they are a shaped foam strap that are really easy to get out of. And bonus is they are very light and don't absorb any water so stay that way.

Im no Lenny, but this is what I do too. I like softer straps that allow me to twist my foot to tighten it up. I've been riding strapped for years now and it is extremely rare that I fall and don't come out of my straps. I've tried a lot of straps and my current favorites are the Ozone straps which hold up well and have a taper to them which allows them to twist nicely. I keep both feet strapped almost all the time (unless I'm riding my unnatural stance) but my rear foot is only really wedged in when I'm jumping, otherwise its pretty easy for me to step in and out.

Yes, because the more the straps pushes your foot downwards, the more it get stuck on the pad, whose job is to provide traction... preventing your foot to get out.
Better spread the forces resisting your foot slipping further into the strap into also the sides of the strap, which are less grippy than the pad. Also this allow your foot to rotate a bit on the side to ease getting out in wipeouts.

Duotone recently released another video from the Spencer bros matching the logic in the below video. Hard to argue against, when he articulates how it changes for each discipline and everyone should aim for something close to the type of riding they're undertaking.
